Patriotic Quinoa Salad

This healthy quinoa fruit salad is loaded with strawberries, blueberries, and a refreshing honey lime dressing.

You can also tweak it to your liking with any fruit.

High in protein and perfect for breakfast, summer potlucks, and anytime

1 cup dry quinoa regular or inca red
10 ounces fresh strawberries
9 ounces fresh blueberries
4-6 ounces of seedless grapes
1/2 cup toasted sliced almonds or walnuts optional
1/4 cup rolled oats uncooked
•1/2 cup coconut shredded
1/4 cup fresh mint leaves, julienned

2 tablespoons honey (use maple syrup or agave to make vegan)
2 tablespoons lime juice
1/8 teaspoon kosher salt
**optional***1 container plain yogurt sometimes I also use vanilla yogurt

For dairy free omit yogurt


The body always knows what to do to heal itself. The challenge is listening and doing what your body needs.
