1 year ago I decided to take my health back

Happy Anniversary To My Health….

I was always pretty healthy ….until I wasn’t.

I gained weight , injured my knee gained more weight was diagnosed with one thing after another and it was really exhausting.

First osteoarthritis and hypothyroidism at age 45

They torn meniscus age 51

Then thanks to the meniscus tear Osteonecrosis set in my knee….

Then she 53 diagnosed officially with spondylolisthesis and a bilateral pars fracture

I had the spondylolisthesis before but my former PCP never told me I had it. But I seen it on an old Mri.

The pain every where was exhausting and some days it still is.

But I decided the heck with all these doctors and I decided to eat mostly plant based but I do still eat chicken fish or turkey now and then and rarely beef.

I ride my recumbent bike 2x a day and I walk when I can. And some days even when I should rest I go walk anyway.

Today’s pictures and videos are from my morning walk : and it’s also one year ago I quit smoking……so it’s a great day !

Pain or no pain I’m not going to just sit around.

Sitting is death

Moving is life

And ya know after I’m done I feel so much better.

1 year since I’ve quit smoking after being a smoker for 40 years. My lungs are feel better my walking speed has improved my distance has improved

1 year since I started eating a healthy mostly plant based but I’m not a vegan and it’s good clean healthy real colorful food . I am using food as medicine in a way to fight pain and inflammation . Now sure I eat a cookie or 2 now and then just not every day. And all my other choices are good so I don’t deprive myself of a treat now and then.

And for having Osteonecrosis,Osteoarthritis, Spondylolisthesis with a bilateral pats fracture in my L5 S1 I feel pretty darn good today even in this cold weather.

Just need to drop some weight one step and one day at a time.

I have taken my life back and no one is going to stop me !

Tomorrow I may be in pain and that’s ok. I can accept that but as long as I know I am doing all I can to combat my pain and keep my body moving and providing it with the best nutrients possible(most of the time)

It’s a win win for me ,one day at a time !

Keep your meds , keep your cigarettes keep your junk fast food.

Gluten-Free Flatbread with Rosemary, Sea Salt and Olive Oil

I have what may be a gluten sensitivity so I’m trying to stay away from what I love and that’s bread wheat and nut bread especially.

And as a treat I’m learning to make things gluten free.

It’s a learning experience …. I hope this recipe comes out ok….

Ingredients

1/2 cup tapioca starch

1/2 cup cassava flour

1/3 cup coconut flour

1/4 teaspoon xanthan gum

1/2 teaspoon baking powder

0.5 teaspoon dried parsley

Pinch of garlic powder

Pinch of garlic salt

2 cloves garlic

1/4 cup olive oil

1/2 teaspoon honey

1/2 teaspoon baking soda

1 teaspoon apple cider vinegar

coarse sea salt

Preparation

1. If you have a pizza stone, place it in the oven. Preheat oven to 400 °F.

2. In a small bowl, combine the chia seeds with 2 tablespoons warm water and set aside.

3. In a large bowl, combine all dry ingredients and mix with a fork.

4. In a small bowl, combine 3/4 cup warm water, the oil and the honey.

5. Add the wet mixture to the dry ingredients and mix with fork.Add chopped garlic

 

7. In a small bowl or cup, add the baking soda and then the apple cider. It will start to bubble. Add to the large bowl and combine. You should now have a nice dough.

8. Place the dough on a piece of parchment paper. Place another piece of parchment paper on top and, using a rolling pin, roll out dough into a large square or circle about 1/4-inch thick.

9. Place in oven on baking stone or on a baking sheet and bake for 15 minutes. Remove bread from oven, brush with olive oil, dried rosemary and coarse sea salt. Continue baking for an additional 5 minutes.

 

Update:

It was a bit to dry for me ….you know how bread , pizza has that soft fluffy texture….mmm

this really didn’t.

It tasted good but for me  the texture wasn’t there …..

Coconut & Cacao Chip Macaroons Gluten Free

Gluten Free doesn’t mean boring

These cookies are delicious and moist and gluten free!

You’ll need:

1 cup shredded unsweetened coconut

1/2 cup + 1 tsp coconut milk

4 Tbsp maple syrup

1 Tbsp coconut flour

Pinch of cinnamon

Pinch of fresh ground vanilla

Pinch of Himalayan sea salt

1/3 cup semi-sweet chocolate (or cacao) chips

How to make it:

Preheat oven to 350°F. Combine all ingredients except chocolate chips in a saucepan and stir over low heat until sticky. When the mixture is still warm, transfer to a bowl and let cool for a few minutes, then add chips. Press or scoop out small balls of mixture and place on a cookie sheet lined with parchment paper. Bake 12 to 15 minutes or until tops start to lightly brown. Let cool before removing from tray.

With the holidays approaching, many of you have started shopping for your friends and loved ones. Coming up with gift ideas for a chronic pain sufferer is challenging, but I’m here to help…..Some don’t even cost money

Offer your services– Offer to do their grocery shopping, run errands, do their laundry or clean their house. Most of us chronic pain patients can do the small stuff, but things like deep cleaning our house is what gets us and can make our pain worse (ask to wash windows, mop, scrub toilets, sinks, tubs). Running to the grocery store or doing much-needed errands for us will help a ton! When we don’t feel good and pain is high, going out and facing the world is a very tough task and sometimes impossible. Yard work is also a huge help. Make a coupon book

Make meals – Make ahead freezer meals, something simple and all we have to do is put it in the oven is a huge help. Make sure to include the directions, temperature, and cooking time on the meal. Try to find out what kind of meals the family likes and make sure your recipe is enough to feed the whole family.

Awareness items for both of you – Something that both of you can wear or have. It shows you care, support us, and that we are in this fight together. Babysit – If they have smaller kids offer to take them out, sometimes just having that quite break while the kids are gone can help us feel better. If you can’t babysit, making a basket for the kids (coloring books, craft stuff, puzzles, a new movie) to keep them occupied will help us too.

Make a donation in their name – Find a non-profit that associates with your loved ones chronic illness and make a small donation in their name. Sometimes the non-profit will even send something out like a certificate after a donation to your loved one.

Personalized gift– Anything from a coffee mug to a pictured blanket, there are so many options and you can personalize just about anything. It not to expensive, but they are probably one of the most thoughtful gifts .

Things to keep them comfortable – Things like a heated blanket, body pillow, fuzzy socks, soft music CD, neck pillow, soft blanket, comfortable robe or PJ’s, good smelling lotions and soaps (make sure nothing triggers headaches) are all great ideas.

These are just a few suggestions, get creative and see what the need is.

Just remember thoughtful gifts come from the heart and not always your wallet.

 

Now if you want to buy a gift here’s some ideas as well.

A simple collection of gift ideas who deal with chronic illness and pain.

An electric heating pad, heating throw or heating blanket. Helps bones

Loose, fuzzy socks. Great for those who’s ankles swell a lot but fuzzy socks are always comfortable and never hurt.

Soft, loose, comfortable pajamas soft and not constricting.

A towel material, hooded robe. Many of my chronic illness friends have a difficult time showering. Sometimes they are so exhausted after showering that it can be heaven to wrap up in an absorbent robe, lay on the bed and dry as they lay there.

Comfortable pillows. Chronic pain patients often need to spend a lot of time in bed or on the couch, and extra pillows that are soft and comfy are always handy!

Coloring books and items to color with. I recommend water color pen brushes.  They look like markers, but have a brush on the end. Going out of the lines if you have tremors still looks pretty, because it’s water colors, and you don’t have to press down and hurt your hand, if you have severe arthritis or any painful muscle or joint conditions.

Got a golfer on your list? If he or she has limited their tee time due to chronic pain, consider getting them special grips to help. These grips are larger and have extra nubs and grippy material so that the golfer can use less strength. For arthritic hands, this can be a way to stay in the game.

Along with adaptive jewelry comes adaptive clothing. This can be anything that doesn’t have a million tricky buttons, clasps, or zippers. A pair of luxurious gloves or a scarf provides soothing warmth in cold weather, or try a beautiful, fluffy robe and slippers for comfort at home. Winter is a time of gorgeous knits, and easy dressing needn’t mean unfashionable dressing..

Excuse Me Are You Drunk or High…

It saddens me to see men and women young and old become addicted to drugs and alcohol

I have lost so many friends because of both.

They went from smart individuals with great paying jobs to being homeless , liars and thieves and how terrible it usually ends in jail or worse death .

With all the information online and the news about drug addiction, overdoses, people having damage to their hearts brains memories because of drugs not just heroin but crack, coke, crystal meth, speed, downers pain pills, valuim, xanax, and yes I am including alcohol and weed.

How can smart people choose to go down such a dark black path that leads to destruction of their lives? And the lives of their family’s?

Do they not understand or care that it rips families apart.

I’m sorry I’ve had my share of pain both physical and emotional and heartache as well as loss , loss of both parents, loss of friends due to death due to disease or overdose or suicide, and I’m here to tell you you need to learn how to cope with life or your going to end up dead.

I’m lucky I guess I always knew how to cope sure not always productive but never destructive.

I see old friends who last year were making 80-100,000 a year now homeless and ruined by cocaine , alcohol and heroin.

Their families destroyed, all because they couldn’t cope with something or someone and started to use drugs or alcohol to bury their feelings and pain……

I’ve attended funerals of friends who died from eating to many somas or xanax that they went to sleep and never woke up.

Or an old classmate overdosed on heroin

Or was killed in a car accident because they were drunk.

Or ended up in jail because they couldn’t hold a damn job any longer and resorted to theft and some prostitution.

Or they are on disability because they fucked up their heart because of cocaine and or crack.

I’ve had friends die from suicide because they were so fucked up they had no idea that the problems they had were just temporary and chose to kill them self.

GET A GRIP PEOPLE!!

I mean we preach to our kids not to do this and yet adults feel they are above this. Wake up call…. YOUR NOT

And kids well kids and young adults have that not me and no fear attitude until the shit hits the fan… and it will sooner or later it will ….

And what about kids today. How can they even start on this shit? They hang out with losers ruining their lives before they even have a chance to live it.

Why do people feel the need to “party and or get high”?

Can’t you have fun with out it?

From what I see you still look fucking miserable and lost. And you sure look like hell so where’s the fun?

Grow up and wake the fuck up people

Drugs and Alcohol KILLS if you don’t think it will You your living a lie.

As holidays are here seems like everyone feels the need to celebrate something and that’s ok if you are a responsible. You don’t drink and drive. You. Know when to stop but some will overindulge with alcohol drugs or both and wind up with DUIs , Go to court and lose your drivers license, pay court costs, insurance rates skyrocket,attorneys fees possible jail time and let’s not forget possible death to you or someone else.

Plus you can and eventually will be come addicted either physically or mentally or both.

So be smart don’t drink and do drugs and for god sake don’t drive under the influence!!

Globally, alcohol misuse was the fifth leading risk factor for premature death and disability in 2010. Among people between the ages of 15 and 49, it is the first. .

In the age group 20–39 years, approximately 25 percent of the total deaths are alcohol attributable

So imagine if your in a room with 100 people 25% is 25 people that could die from alcohol.

Alarming!!

And stats are just as bad across the board when people use drugs!

And who the hell wants to willingly take Molly? Are people that stupid it’s called the date rape drug for a reason!

People will slip you this in your drink or lie and tell you it’s something else…

I’m just shocked at how dumb people are…..

if you think it can’t happen to you…it probably will …

Do why chance becoming and alcoholic or addicted to drugs?

Or killing you or done innocent person in a crash because you want to get high and try to escape reality….hopefully you know that drinking and drugs don’t make your problems go away….if anything they will make them worse…..

So all you adults and kids

Grow the fuck up get a grip! And get some help. Before you end up in jail or dead!!!

Detoxing from what I have seen others go through is a version of hell….

Maybe I just had more experience dealing with heartache and pain early in life and learned to cope better.

Just to name a few tragedies in my life

I remember watching my dad so many times as a young child age 8 having heart attacks open heart surgery nearing death. Fighting to live he didn’t drink he didn’t use drugs but his drug was cigarettes I remember being scared that my dad was going to die.

I saw him try so many times to get back to work but his heart wouldn’t allow it

He had his his 1st heart attack at age 39 and he didn’t use drugs he just had a bum ticker he sadly died at age 56 I was 25.

I watched my mother die at age 65

I had no brothers and sisters so I basically was now an orphan….

I was physically attacked in hs Thank God a friend saw it and saved me or I would have been raped.

I had an abusive first marriage I suffered joblessness homelessness and I never reached for drugs or alcohol to cope.

I smoked weed in hs for a brief moment I dreamt when I was older but I never abused it.

I stopped before I got in to deep.

I remember being in pain from a car accident in 2000 and all the doctors wanted to do was medicate me. At first I did what they said but I saw what it was doing to me… I was becoming depressed so I said screw them fired them .

I’m not against people in pain getting help I am against drug and alcohol abuse of any kind ……

Are we that lost and weak or ungrounded that we have to use substances just to cope?

Or is that your excuse!!!

I will pray for you to wise up !

Please call and talk to someone get help before it’s to late!!

Knee Pain In The Winter

Knees not feeling great this time of year?
Do you need a thermometer to let you know when the temperatures change outside?
Or do your joints painfully serve as your weather forecast? Unfortunately, for many who suffer from osteoarthritis or other inflammatory conditions, cold weather can cause havoc on already vulnerable parts of your body.
What causes the pain?
The Barometric pressure drops in winter. Researchers believe that when this happens, inflamed areas of our bodies (knees, hips, hands, elbows, and shoulders) swell. Swelling can irritate nerves, which results in increased pain.

Also low vitamin D levels add to pain

You may need more of the sunshine vitamin, suggests new research from the Clinical Journal of Pain.

Compared to those osteoarthritis sufferers with adequate vitamin D levels, those short on D reported significantly more knee pain and loss of function, according to the study data. Those results held regardless of a person’s weight, although the obese study participants were more likely to suffer from a vitamin D deficiency.

There are several different ways low D might mess with your knees, roughly 42% of Americans are dangerously low when it comes to vitamin D. You get most of your D from sun exposure.

A simple blood test from your doctor can determine whether you’re low in the vitamin, If you’re deficient, taking a vitamin D supplement for several months can help you raise your levels. While it’s difficult to get too much D, the amount you need depends on your weight and body composition. Your body stores vitamin D in the fat cells, meaning those with greater amounts of body fat require more of the vitamin to limit pain and loss of function.

Another good reason to keep vitamin D levels in good range is low D doubles your risk for dementia.

Eat a balanced diet I have personally had great pain relief since changing to mostly plant based diet.

Follow a healthy diet by including seasonal fruits, vegetables, nuts grains,seeds .

It is essential for people who are already suffering from joint and knee pain to include foods rich in Vitamin K, D and C (like oranges, spinach, cabbage and tomatoes) into their diet; as they play an important role in the production of cartilage and helps the body absorb calcium thus strengthening the bones.

I also have learned hydration is also important for pain relief. Try to drink plenty of water or herbal teas, like nettle tea , chamomile ,ginger tea as our dehydration reduces flexibility, which can increase the chances of injury. Supplements with vitamin D or fish oil is recommended as it is rich in omega 3 which helps decrease inflammation. Stay away from unhealthy drinks. Alcohol, tea, coffee, and other aerated drinks reduce the amount of calcium you absorb, and weaken bones.

Swap your caffeine-fuelled drinks with water and fresh juices.

Stay Active
Exercise regularly. It not only helps you lose weight but also increases flexibility and strengthens the muscles that support the knee ( walking, swimming or cycling). Your knees experience about three to four times your body weight when you walk, so lose weight to help your knees.
Always check with your Doctor before starting any new exercise.

Fun Fact :

Keep your feet warm. Your big toe is your body’s thermostat, so keep it warm and your whole body will be warm.

Every year, on the third Thursday of November, smokers across the nation take part in the American Cancer Society Great American Smokeout event. Encourage someone you know to use the date to make a plan to quit, or plan in advance and then quit smoking that day. By quitting – even for 1 day – smokers will be taking an important step toward a healthier life and reducing their cancer risk.

The American Cancer Society’s Great American Smokeout is an annual event that encourages smokers to make a plan to quit smoking .

The 42nd annual Great American Smokeout will be held today November 16, 2017.

About 36.5 million Americans still smoke cigarettes, and tobacco use remains the single largest preventable cause of disease and premature death in the world. While cigarette smoking rates have dropped (from 42% in 1965 to 15.1% in 2015), cigar, pipe, and hookah – other dangerous and addictive ways to smoke tobacco – are very much on the rise. Smoking kills people – there’s no “safe” way to smoke tobacco.

Quitting smoking has immediate and long-term benefits at any age. Quitting is hard, but you can increase your chances of success with help. Getting help through counseling or medications can double or triple the chances of quitting successfully.

Benefits of Quitting Smoking Over Time

It’s never too late to quit using tobacco. The sooner you quit, the more you can reduce your chances of getting cancer and other diseases.

These are just a few of the benefits of quitting smoking for good. Quitting smoking lowers your risk of diabetes, lets blood vessels work better, and helps your heart and lungs.

Life expectancy for smokers is at least 10 years shorter than that of non-smokers. Quitting smoking before the age of 40 reduces the risk of dying from smoking-related disease by about 90%.

Quitting while you’re younger will reduce your health risks more, but quitting at any age can give back years of life that would be lost by continuing to smoke.

Are there benefits of quitting that I’ll notice right away?

I am so glad I quit. I breathe better , and although my bones still ache I don’t have the consent debilitating pain I had a year or two ago and I know that because I stopped smoking is a Factor.

Our home doesn’t stink of cigarette smell, our clothes our hair.

I actually hate the smell of cigarettes now and can’t believe I used to smell like that.

One of the few things scientists know for sure about marijuana and cardiovascular health is that people with established heart disease who are under stress develop chest pain more quickly if they have been smoking marijuana than they would have otherwise. This is because of complex effects cannabinoids have on the cardiovascular system, including raising resting heart rate, dilating blood vessels, and making the heart pump harder. Research suggests that the risk of heart attack is several times higher in the hour after smoking marijuana than it would be normally.

Thinking of chilling out kicking back and lighting up a joint?

Think again.

A new study from Boston’s Beth Israel Deaconess Medical Center and Harvard Medical School says marijuana increases the risk of having a heart attack within the first hour of smoking to five times that of non-smokers.

Moms Stove Top Pot Roast

My mother made the best Pot Roast. I can smell and taste it now.

On the rare occasion I eat beef I make this.

Especially now that it’s cold out.

Stove Top Pot Roast

Ingredients

1 boneless beef chuck roast (3 to 4 pounds)

2 to 3 garlic cloves, sliced

2 tablespoons olive oil

1 large onion, cut into 1/2-inch slices

3 celery ribs, cut into 1/2-inch slices

2 medium turnips, peeled and cut into chunks

4 cups water

2 teaspoons beef bouillon granules or 1 pack onions soup mix

4 medium potatoes, peeled and quartered

1 pound carrots, cut into chunks

1/2 pound fresh green beans, trimmed

1/2 pound sliced fresh mushrooms

1 small can diced tomatoes

3 tablespoons cornstarch

1/3 cup cold water

Directions

1. Cut slits in roast; insert garlic slices. In a Dutch oven, brown roast in oil on all sides. Remove roast; add the onion, celery and turnips to skillet. Place roast over vegetables; add water and bouillon. Bring to a boil. Reduce heat; cover and simmer for 2 hours.

2. Add the tomatoes,potatoes, carrots and beans; cover and cook for 45 minutes. Add mushrooms; cover and cook 15 minutes longer or until meat and vegetables are tender. Remove to a serving platter and keep warm.

3. Skim fat from cooking juices. Combine cornstarch and cold water until smooth; stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with roast and vegetables. Yield: 8-10 servings.

Blueberry Bars

These are so delicious

Growing up my mom used to make them. Sometimes with blueberries but mostly with dates.

These blueberry squares are a twist on her date squares.

One difference: these squares are not nearly as rich. I remember date squares being very rich with butter or shortening in the crust, and also quite sweet.

These fresh blueberry bars are just sweet enough, and not overly rich. You can enjoy one or 2 and feel overwhelmed with sugar and fat.

Fresh Blueberry Squares

These squares are similar to date squares, but made with blueberry and whole-grain goodness! Since you can use frozen blueberries, you can make these treats anytime of the year.

Course Dessert

Makes 12-16 squares or cut slightly larger 9 squares and then diagonal to make triangles

Ingredients

Filling:

• 3 cups fresh blueberries (can sub frozen)

• 1/8 tsp sea salt

• 3 tbsp coconut sugar (or other unrefined sugar)

• 2 tsp freshly squeezed lemon juice

• 1 tbsp arrowroot powder

• 1/2 tsp agar powder

Base and Topping:

• 2 cups rolled oats see note

• 1 cup oat flour

• 1/4 tsp sea salt (rounded) or 1/2 tsp scant

• 1 ½ tsp lemon zest

• 1/2 cup pure maple syrup

• 1 1/2 tsp pure vanilla extract

• 2 – 2 1/2 tbsp coconut butter (softened)

Instructions

For the filling: in a saucepan over medium heat, combine the blueberries, salt, and sugar.

Cover, and let the berries start to soften and release their juices, stirring occasionally.

Once berries have broken down and the mixture is becoming more like a sauce, reduce heat and let simmer for 7-8 minutes, covered.

Meanwhile, in a small bowl, combine the lemon juice with the arrowroot and agar, and stir through until combined (it will be thick).

Get ready to add the arrowroot/agar blend to the blueberries by first removing 2-3 tablespoons of the warmed blueberries juices and stirring into the arrowroot slurry, one tbsp at a time.

This will help loosen that mix and also temper the arrowrrot and agar, making it less likely to clump in the sauce.

After it has loosened, add it to the blueberry sauce, immediately stirring it through. Increase heat slightly to bring mixture back to a boil for just a minute or so.

Then, remove from heat and transfer mixture to a bowl and let chill in refrigerator for about 20-30 minutes, stirring occasionally to prevent a ‘skin’ from forming on top of the mixture.

Meanwhile, prepare the crust: Preheat oven to 350°F (176°C). In a large bowl, combine all the dry ingredients including zest. In a small bowl, combine the maple syrup, vanilla, and coconut butter.

Add the wet mixture to the dry, and stir through until well combined; the consistency will be crumbly yet hold together somewhat when pressed.

Transfer about 2⁄3 of the mixture to a lightly oiled (or lined with parchment paper) 8″ x 8″ pan and press in evenly.

Pour the chilled (can still be slightly warm) blueberry mixture on top, then sprinkle on the remaining crust mixture.

Bake for 25 minutes, until the blueberry filling is bubbly and the crust is golden brown in spots.

Transfer to a rack to cool, and then to the fridge to cool completely before cutting into squares.

Recipe Notes

Substitutes

Quick oats can be substituted in whole or part for the rolled oats, however the texture of the squares will be different. Using the rolled oats, the squares will have a chewier texture and a nuttier flavor, whereas the quick oats become softer and also absorb more of the moisture of the blueberry layer.

Apple Cake

Apple Cake

• 1/2 pound of butter, softened

• 1 1/2 cups plus

• 1 tablespoon of honey

• 5 eggs, beaten

• 3 tablespoons of vanilla

• 1 cup of yogurt (or buttermilk)

• 2 1/2 cups of unbleached flour

• 2 cups of whole wheat pastry flour

• 2 teaspoons of baking powder

• 2 teaspoons of baking soda

• 1 teaspoon of nutmeg

• 4 teaspoons of cinnamon

• 3/4 cup of chopped walnuts

• 3 1/2 cups of chopped apples, mixed types

Cream the butter and honey together until smooth. Add the beaten eggs, vanilla, and yogurt, and stir well. In a separate (large) bowl, combine the flours, baking powder, baking soda, and spices. Add the butter/honey mixture, the chopped walnuts and the apples, and stir everything together. Pour the batter into two greased 9″ round pans, and bake at 350°F for about 45 minutes, until a knife inserted in the center comes out clean. Remove the pans from the oven, let the cakes cool, and serve portions with whipped cream.

Vegetable Sushi

This recipe is very versatile as you can use any ingredients you like. Sushi is very good for you and is absolutely delicious as well as being easy and enjoyable to make!

Ingredients

For the rice: 

2 cups short-grain Japanese rice, rinsed

1/4 cup rice vinegar

1 tablespoons sugar

For the rolls:

10 nori sheets (dried seaweed), halved

Sesame seeds, for sprinkling

1 cucumber

1 avocado

1 plum tomato, seeded

1 small red onion

20 asparagus spears, trimmed and blanched

Wasabi paste, for spreading and serving

1 romaine lettuce heart

Pickled ginger, for serving

Directions

Make the rice. Combine the rice and 2 cups water in a rice cooker and cook according to the manufacturer’s instructions. A rice cooker is the best way to get perfect sticky-firm rice, but if you don’t have one, just use a saucepan.

Fold in the vinegar. Combine the vinegar, sugar and 1 teaspoon salt in a saucepan over medium heat, stirring to dissolve the sugar. Transfer the cooked rice to a large wooden bowl (traditionally, a wooden tub). Drizzle a quarter of the vinegar mixture over a wooden spoon or spatula onto the rice. Fold the rice gently with the spoon to cool it and break up any clumps; be careful not to smash the grains. Fold in the remaining vinegar mixture and let the rice sit 5 minutes. Spread the rice.

Cover a bamboo sushi mat with plastic wrap. Place a half nori sheet rough-side up on the mat. Moisten your hands and scoop a handful of rice, slightly larger than a lemon, onto the nori. Press the rice to spread it evenly up to the edges of the nori, moistening your fingers as you go. Sprinkle with sesame seeds.

Prepare the vegetables. Peel the cucumber and slice into matchsticks. (Morimoto cuts the entire cucumber into a paper-thin sheet, then quickly slices it into strips-but he’s had some practice.) Thinly slice the avocado, tomato and red onion; peel the tough ends of the asparagus. Add the filling. Carefully flip over the nori so it’s rice-side down on the mat with the short end facing you. Spread a bit of wasabi paste in a line about one-third of the way up the nori-it’s spicy, so use it sparingly.

Arrange a few pieces each of lettuce, cucumber, avocado, tomato and onion in a tight pile in the lower third of the sheet. It’s OK if the vegetables hang over the edges of the nori. Roll the sushi. Roll the sushi away from you with your hands, tucking in the vegetables as you go. Remove the mat from under the roll and place it on top.

Press the roll into a compact rectangular log, using the mat to help you. Slice the roll. Cut the sushi roll into 4 to 6 pieces. Repeat with the remaining nori, rice and vegetables. Serve with pickled ginger and more wasabi.
